A server's country tells you where the machine physically sits, not where its players are from. The further the server is from you, the longer every block break, hit and chat message takes to register — that delay is your ping. A server in American Samoa will usually feel noticeably sharper for nearby players than one on another continent, which matters most in PvP and minigames and barely at all in creative or casual survival.
