A server's country tells you where the machine physically sits, not where its players are from. The further the server is from you, the longer every block break, hit and chat message takes to register — that delay is your ping. A server in South Korea will usually feel noticeably sharper for nearby players than one on another continent, which matters most in PvP and minigames and barely at all in creative or casual survival.
Many of the larger networks run proxies in several regions at once, so a big server listed elsewhere can still play well from here. Use this list as a starting point, then check the ping shown on each server's page.
